What makes them special for me is that we often, or almost always, eat them fresh. One of the advantages of living on an island surrounded by water is that we're practically on the beach waiting for the fishermen to come back from their work. Sometimes we help them out and they give us some, or, as in this case, we can choose the ones we like best straight from the boat—it couldn't be fresher. Another detail I appreciate is that some of them are so large that they can be cut into slices.



That's why I personally choose the smaller ones. They're easier to clean and also more convenient to fry, as they fit in the pan all at once. This undoubtedly saves us time and money, and perhaps even gives us a better chance of achieving that characteristic flavor they possess. For me, the best are these little ones you see on the plate, which we call "araritas." Just a touch of salt and lemon is enough. We also have "catfish" and "little tuna," which, as you can see, we buy directly from the cans without having to go to a market. It's more economical, and we can choose what we like best.
