That pizza dough is on a mission!! I've had that happen a few times with sourdough starter (while it's supposed to be dormant in the fridge)
Is that bread called Reeska? It looks like something I ate frequently in Oslo.

It’s not dormant, just slow as long as there is food for the yeast.
