Mini Lotus Cheesecake

Happy Sunday to all of you. May your weekend go well. We are having rainy days these days and enjoying a lot this cold weather. The cold weather is a big relief that you are not going to turn on the AC. Here an electricity bill is very high and inflation rate is sitting at 42% which is extremely high. Though basic income is almost none in this country and ALLAH known how people are bearing such expenses of their families.

Today I'm going to share a yummy dessert recipe that I already promised with you guys that I will soon share a detailed recipe. Though this recipe got a very minimal ingredients to make it but the end result is just amazing. Loved the way how they got turned out.

Mini Lotus Cheesecake

You can make a big cheesecake too with the help of these ingredients but the quantity will be doubled. I preferred to make tiny shapes of cheesecake which looks cute while seeing it for the first time.

Let's get started with recipe:

⚡️ Ingredients:

Lotus Biscuits500g
Lotus Spread4-5tbsp
Cream Cheese200g
Whipping Cream1 cup
Butter2-3tbsp

💫 Method:

First off, gather all of the mentioned ingredients at one place.

Now take a blender, crush lotus biscuits along with 2tbsp melted butter. Add 1 tablespoon of crush biscuits in cupcake liners and press with glass. Then put this tray in the fridge for 20 minutes to set completely.

Now add cream cheese and 2-3tbsp lotus spread in one bowl and whip it until it incorporated well then set aside

In another separate bowl, add 1 cup of whipping cream and whip it until stiff peaks. After whipping, add the cream cheese mixture and whip it for another 2 minutes

Fill the piping bag with whipped cream and add in cupcake liners on top of biscuits base as you can see the pictures. Fill all of the cupcake liners and put this tray in the fridge for good 2-3 hours to set it completely.

After few hours, take out the dish out of fridge and de-mould it. Now pipe the melted lotus spread in the piping bag and garnish the cupcakes
