Mid-week, surprise budget "indulgence"

It's rare that I prepare a three course meal for just the two of us. Sounds kinda grand, but not really. It's partly a function of tying to have a balanced diet, not chucking food away and revelling in gardenloot.

The first "course" or antipasti was brinjal and homemade cottage cheese on an Asian slaw. The last of the jar salads from the market. Still crunchy and fresh.

The "entree", you guessed right: pasta with peppers that didn't get pickled, with mushrooms brought together with thyme, garlic chives and parsley from the garden.

Finally, the piéce de resistance: strawberries and locally made full cream yoghurt.

And the rose, you ask? A fallen angel. I accidentally broke that bud off as I was picking the strawberries. Roses and strawberries are great friends.

I find it very difficult to cook for two and always have food left over. I will take heed of your interesting and informative post @fionasfavourites Lol! Always find your food creations an inspiration, thanks for sharing

Fancy! Three dishes are never easy to pull off. Hard work, sweat, and tears! But well worth it. That pasta looks absolutely delicious! I might steal your recipe 😅

Hahaha! Not difficult if you have stuff stashed in the fridge and garden loot. I often find the most challenging part of a meal is deciding what to do. You don't have to steal any recipe. They are there for the taking. My gifts to you...😁

This line! Many a fight have broken out in my household with people not deciding what they want. I am the "chef" in the house and people never make up their mind about what they want to eat. The paradox of choice, in the end, no one decides so I never know what to cook! 🤣

With just two of us, it's a lot easier. Which reminds me, I have promised to do a post on how I plan our meals. Not a perfect science, but it's helpful...

That is true. When there are many mouths to feed, things get out of hand, or as they say: too many cooks spoil the brew, or something in that line!

Oh yes, that would be very helpful! Planning is sometimes more important than cooking itself.
