Channeling my inner Mediterranean Mamma

That was last evening's meatfree meal. Yes, it was Monday and it felt like a Friday: as it was a public holiday, I happily spent the day in my other office making koeksisters and starting to process the tomato delivery.

That is this week's kitchen list. Batch one of the tomatoes - on the stove - is done (7.5kg down - about another 14 to go...).

The little bit of Passata not worth bottling went on to our supper of baked, lentil (from the jar) stuffed green peppers. On a bed of couscous.

Yes, it was another experiment, channeling my inner Mediterranean mamma: a combination Italian and Moroccan. Another success - it worked. Happily. The Husband declared supper "absolutely delicious", and which I am, on pain of death, not to repeat!

Oh, and served on my favourite little plates that the very talented martket pal and potter, T, makes.

The hungry cat keeps coming here again and again 😹. And today, I am late with making lunch, lol, so more hungry. I love couscous and stuffed peppers, but I've never stuffed them with lentils. This is something I'm going to try. And the plates are gorgeous :)

Nor had I. With anything! And, to answer @dswigle's question, the reason I did is because I have a surfeit of both and after a long kitchen day followed by a couple of glasses of wine, easy! That it worked and I'll do it again, is another matter, entirely!

How inventive! I love stuffed peppers and couscous... I would never have thought of lentils in them, yet, it looks delicious! Whatever made you try them? I think they look delightful ad the dishes look so fun!
