#FoodieMood (ES-ENG) - Cocinando Costillas de Cerdo Agridulce por primera vez | Cooking Sweet and Sour Pork Ribs for the First Time
Siempre hay una primera vez para todo, algunas veces nos irá bien y otras no tanto. Lo más importante es que si fallamos al primer intento lo sigamos intentando hasta lograr el objetivo. En mi caso el objetivo era lograr que unas costillas de cerdo, que nos regalaron, quedaran muy deliciosas, que la carne se desprendiera del hueso, darle un toque asiático al prepararlas en salsa agridulce. Y les cuento que luego de varios intentos pude lograrlo.

En mi caso el objetivo era lograr que unas costillas de cerdo, que nos regalaron, quedaran muy deliciosas, que la carne se desprendiera del hueso, darle un toque asiático al prepararlas en salsa agridulce. Y les cuento que luego de varios intentos pude lograrlo.
Aproximarnos por primera vez a preparar un platillo no siempre es tarea fácil y si de carnes se trata existe la imperiosa necesidad de lograr que el punto de cocción sea el correcto, considero que mi fuerte no es la preparación de carnes, así que correspondió hacer una investigación para preparar estas costillas de cerdo por vez primera.¡A continuación te cuento cómo me fue en esta aventura en la cocina!
It is not always easy to prepare a dish for the first time, and when it comes to meats there is the imperious need to get the cooking point just right, I consider that my forte is not the preparation of meats, so I had to do some research to prepare these pork ribs for the first time. I will tell you how I did in this adventure in the kitchen!
Ingredientes Ingredients
- 480 gramos de Costilla de Cerdo.
Salsa Agridulce:
- 6 cucharadas de salsa de Tomate.
- 3 cucharadas de salsa de soya.
- 1 y 1/2 cucharadas de ajo en polvo.
- 3 cucharadas de vinagre blanco.
- 4 cucharadas de azúcar.
- 2 cucharadas de maicena (para espesar la salsa).
- 480 grams of pork ribs.
Sweet and Sour Sauce:
- 6 tablespoons of tomato sauce.
- 3 tablespoons of soy sauce.
- 1 and 1/2 tablespoons garlic powder.
- 3 tablespoons of white vinegar.
- 4 tablespoons of sugar.
- 2 tablespoons cornstarch (to thicken the sauce).
¿Cómo preparlo? How to prepare it?
- Sé que la mejor manera para darle sabor a las carnes es macerarlas, procedí a preparar la salsa agridulce donde reposarían las costillas por un mínimo de 30 minutos. Para preparar la salsa se añaden la salsa de tomate,salsa de soya, ajo en polvo, vinagre blanco, azúcar y mezclamos bien. Aún no agregamos la maicena.
I know that the best way to flavor meats is to marinate them, so I proceeded to prepare the sweet and sour sauce where the ribs would rest for a minimum of 30 minutes. To prepare the sauce, add the tomato sauce, soy sauce, garlic powder, white vinegar, sugar and mix well. Do not add the cornstarch yet.
- Para asegurarme sobre el tiempo de cocción las costillas de cerdo esruve investigando al respecto, luego de ver varias alternativas opté por la que me recomendaba sancochar las costillas por 15 minutos. Pero cabe destacar que al término de este tiempo las costillas no estaban lo suficientemente suaves. De igual forma, pensando que se ablandarían durante la cocción en salsa, las saqué y procedí a dorarlas.
To be sure about the cooking time of the pork ribs, I did some research and after looking at several alternatives, I opted for the one that recommended boiling the ribs for 15 minutes. But it should be noted that at the end of this time the ribs were not soft enough. Similarly, thinking that they would soften during the cooking in the sauce, I took them out and proceeded to brown them.
- Las cociné por 20 minutos en la salsa...pero tampoco estuvieron lo suficientemente tiernas para mi gusto, así que saque mi as bajo la manga: La olla de presión. Agregué un poco de agua y las dejé por 15 minutos. Al terminar este tiempo estuvieron bien tiernas, tal como yo lo quería.
I cooked them for 20 minutes in the sauce...but they weren't tender enough for my taste either, so I pulled out my ace up my sleeve: the pressure cooker. I added a little water and left them for 15 minutes. At the end of this time they were very tender, just as I wanted them to be.
- Las coloque en la salsa donde las había cocinado anteriormente, por unos 10 minutos para que redujera. Luego saque una parte de la salsa, agregué la maicena y coloque este preparado en la olla nuevamente para espesar la salsa.
I put them in the sauce where I had previously cooked them, for about 10 minutes to reduce. Then I took some of the sauce out, added the cornstarch, and put it back in the pot to thicken the sauce.
¡Y así terminó mi aventura! La verdad que valió la pena el tiempo y el esfuerzo dedicado, ya aprendí que me resulta más fácil y rápido colocar las costillas de cerdo en la olla de presión, luego puedo proceder a dorarlas y a añadir en la salsa agridulce. Del ensayo - error simpre obtenemos grandes aprendizajes, así que sigamos explorando en la cocina, intentando cosas nuevas y aprendiendo cada día.
And that was the end of my adventure! The truth is that it was worth the time and effort, I learned that it is easier and faster to place the pork ribs in the pressure cooker, then I can proceed to brown them and add them to the sweet and sour sauce. From trial - error we always get great learnings, so let's keep exploring in the kitchen, trying new things, and learning every day.

Esta receta está ¡buenísima! de seguro el sabor fue espectacular; y sí, hay que pasarlas por olla a presión, sean de cerdo o de res, siempre son un corte duro, que requiere suficiente cocción para poder degustarlas al máximo. Menos mal que le diste la vuelta. Muy buen post. ¡Saludos!

Sweet and sour pork ribs is one of my favorite dish! I used to cook it by tamarind sauce but your recipe with tomato sauce actually really catch my eyes because of its nice color! Thanks for sharing!
