Encurtido de Calabacín | Un estupendo y ligero aperitivo (ES-EN)
La mezcla de vinagre con azúcar es utilizada en ciertas recetas llenas de sabor, como por ejemplo para preparar el arroz de sushi. Los sabores agridulces son capaces de llevar a nuestro paladar a viajar por exquisitos lugares- Esto deja en claro que los opuestos se atraen y esto se cumple de formas maravillosa en la cocina.
The mixture of vinegar with sugar is used in certain recipes full of flavor, for example to prepare sushi rice. Sweet and sour flavors are able to take our palate on a journey to exquisite places - this makes it clear that opposites attract and this is true in wonderful ways in the kitchen.
Encurtir los vegetales es una excelente manera de permitir que ellos duren mucho más tiempo, o al menos eso es lo que se pretende, porque si amas tanto un buen encurtido de vegetales tanto como yo pues no va a durar por muchos días.
Pickling vegetables is an excellent way to allow them to last much longer, or at least that's what is intended, because if you love a good vegetable pickle as much as I do, it won't last for many days.
En esta ocasión me animé a realizar un encurtido de calabacín, a mi abuela no le agrada este vegetal así que me propuse prepararlo en encurtido, sabía que no podría resistirse al rico sabor que toma una vez realizado este fácil proceso, no me equivoqué pues al terminar me dijo: Así me comería todo el calabacín del mundo.
This time I decided to make a zucchini pickle, my grandmother does not like this vegetable so I decided to prepare it as a pickle, I knew she could not resist the rich flavor it takes once this easy process was done, I was not wrong because when I finished she told me: This way I would eat all the zucchini in the world.

Ingredientes Ingredients
- 1 Calabacin.
- 1 cebolla.
- 1/2 taza de agua.
- 1/2 taza de vinagre blanco.
- 2 cucharadas de azúcar.
- 1 cucharada de mostaza.
- Sal al gusto.
- Pimienta al gusto (en polvo o en granos).
Envase de vidrio con tapa para colocar el encurtido.
- 1 Zucchini.
- 1 onion.
- 1/2 cup of water.
- 1/2 cup of white vinegar.
- 2 tablespoons of sugar.
- 1 tablespoon of mustard.
- Salt to taste.
- Pepper to taste (powdered or in grains).
Glass container to place the pickle.
¿Cómo prepararlo? How to prepare it?
- Puedes encurtir varios vegetales en un solo envase, entre ellos se encuentran las zanahorias, brócoli o coliflor. Yo elegí el calabacín y lo acompañé con cebolla. Lo primero que hice fue quitar la piel al calabacín, dejé solo unos pequeños pedazos de la misma, luego lo corté en rebanadas delgadas.
You can pickle several vegetables in one container, among them are carrots, broccoli or cauliflower. I chose zucchini and accompanied it with onion. The first thing I did was to remove the skin from the zucchini, I left only a few small pieces of it, then I cut it into thin slices.
- Procedí a cortar la cebolla en aros delgados, el grosor de los vegetales siempre va a depender de tu gusto. coloqué la cebolla en un bol junto con el calabacín y les coloqué sal al gusto por encima, esto me permite ablandarlos un poco y que suelten líquido que uso en el encurtido. Reservé.
I proceeded to cut the onion into thin rings, the thickness of the vegetables will always depend on your taste. I placed the onion in a bowl along with the zucchini and put salt to taste on top, this allows me to soften them a little and release liquid that I use in the pickling. I set aside.
- Para preparar el líquido del encurtido se mezclan el agua, vinagre, azúcar, mostaza, pimienta y se lleva al fuego hasta que hierva.

- Se coloca el calabacín y la cebolla dentro del envase de vidrio y se cubre con el líquido tibio.
Place the zucchini and onion inside the glass container and cover with the warm liquid.
- Este encurtido se lleva a la nevera por 2 o 3 días.
This pickle is kept in the refrigerator for 2 or 3 days.
Yo lo dejé en la nevera por tres días, una vez que ha pasado ese tiempo el líquido reducirá un poco su volumen, puedes acompañarlo con pan tostado como ves en mi imagen de portada o incluso comerlo solo, todo dependerá de cuánto te gustan los encurtidos de vegetales. En casa lo devoramos. Ligero, nutritivo y delicioso.

Bueno esas son palabras mayores, si te está dando acidez quizá no esté bien que consumas vinagre tampoco, trata de hacer la receta con menos vinagre entonces, también podrías usar semillas de mostaza, claro habría que ver si te cae bien de esa forma, son más naturales y dan sabor, igual con la pimienta la puedes usar en granos.

Hola @eugelys, esta es una receta muy buena, por lo sencilla, práctica y deliciosa que es; además de permitirnos el poder conservar las verduras de temporada por más tiempo, aprovechando la baja en los precios. Creo que el uso de la mostaza, le da profundidad al sabor del calabacín, y un toque muy interesante que puede aprovecharse para hacer aperitivos y para enriquecer ensaladas y guisos. La explicación está muy completa, y ciertamente, podemos usar esta técnica con otros vegetales. Gracias por publicar en Plant Power (Vegan). Saludos.
Exacto, así podemos por más tiempo esas verduras de temporada. Solo hay que dedicarse un poco más a preparar en masa para poder disfrutar por más días.

Saludos amiga, pues si la combinación de vinagre y azúcar me encanta, por ejemplo yo preparo esa ensalada con repollo morado y zanahoria, un toque de vinagre azúcar y mayonesa y el sabor es de la gloria, exactamente es la misma que dan en Arturo's que delicia xD.
Esta receta no se queda atrás, aunque no me agrada mucho la cebolla siento que este encurtido sabe riquísimo.
