Mi secreto en la cocina / My kitchen secret
Saludos a la querida comunidad Hive, hoy quiero compartir un secreto de cocina, que muchos preguntan cuando prueban mi comida y que pocas veces me he atrevido a compartir, espero lo disfruten!
A los 11 años escribí un libro, no fue gran cosa, solo era una recopilación de datos interesantes para la cocina, lo escribí en un cuaderno del colegio, con fotos recortadas de las revistas de mi mamá. Fue un trabajo de dos años, donde mi mente infantil jugaba a la cocina. De esa práctica aprendí mucho, porque aunque no soy amante de cocinar, me distingo por mis sabores, a tal punto, que amigos cercanos me han propuesto abrir un restaurant, propuesta a la que siempre me negué, pues no quise, ni quiero, pasar mis días metida en una cocina, sea la de mi hogar, o una industrial. Pero sin embargo me gusta agasajar a mis querencias con mis platillos.
Hoy no les traigo ninguna receta, pues soy una cocinera intuitiva y no sigo ninguna, me gusta mezclar los colores y los sabores, busco siempre ingredientes locales y de temporada. Mi abuela Belén me transfirió el gusto por los buenos sabores, porque era una cocinera estupenda, y mi otra abuela, María, me enseñó de la diversidad en los gustos foráneos. Así que hoy les traigo algunos secretos que he aprendido, de estas dos mujeres y de otras que cocinaban como diosas y a las que nunca pregunté ni una sola receta, solo los secretos que las distinguían.
Mi abuela Belén, basada en una leyenda bíblica, me dijo que a los granos había que cambiarles el agua en que se cocinaron los primeros 20 minutos, porque la virgen María se había tropezado con ellos alguna vez, realmente no se si alguna vez llegó a tropezar con una planta de caraotas o de arvejas, pero mas tarde aprendí que elimina el gusto amargo de algunos granos.
También aprendí que ciertos ingredientes es mejor aplastarlos que rebanarlos, para potenciar su sabor, podemos decir esto del ajo, por ejemplo, que tiene mayor capacidad de expandir su sabor al pasar por el triturador, que al ser troceado con el cuchillo.
Mi técnica para cocinar
A la señora, Evangelina, del pueblo de La Sabana, en el litoral venezolano, le debo el secreto mejor guardado de mi cocina. Ella con ese sabor celestial cautivó mis sentidos, y quise aprender de una maestra.
Cada ingrediente debe cocinarse por separado, es la razón por la que voy agregando uno por uno, cada ingrediente. Y comienzo siempre con la cebolla, cuando ya está marchita, agrego el siguiente ingrediente, y así hasta haber terminado. Esto para que cada sabor cuente su historia y nos hable de sus virtudes, porque un plato es una ópera, donde muchos artistas ponen de su parte para crear una gran obra, pero eso no es todo.
Todos sabemos que la sal es la responsable de activar los sabores en los platos, por eso, a cada ingrediente se le coloca una pisca de sal una vez agregado a la olla, para que cada ingrediente se distinga y aporte su contenido, además de eliminar por completo el desagradable (para algunos) olor de la cebolla.
Así cada sabor tiene su lugar y su valor dentro de los platos a degustar, no es una técnica de chef es saber ancestral.

Greetings to the dear Hive community, today I want to share a cooking secret that many people ask when they try my food and that I have rarely dared to share, I hope you enjoy it!
When I was 11 years old I wrote a book, it was no big deal, it was just a compilation of interesting facts for the kitchen, I wrote it in a school notebook, with pictures cut from my mom's magazines. It was a two-year work, where my childish mind played at cooking. From that practice I learned a lot, because although I am not a lover of cooking, I distinguish myself by my flavors, to such an extent, that close friends have proposed me to open a restaurant, a proposal to which I always refused, because I did not want, nor do I want, to spend my days stuck in a kitchen, whether in my home, or an industrial one. But nevertheless, I like to entertain my friends with my dishes.
Today I do not bring you any recipe, because I am an intuitive cook and I do not follow any recipe, I like to mix colors and flavors, I always look for local and seasonal ingredients. My grandmother Belén transferred me the taste for good flavors, because she was a great cook, and my other grandmother, María, taught me about diversity in foreign tastes. So today I bring you some secrets I have learned, from these two women and others who cooked like goddesses and to whom I never asked a single recipe, only the secrets that distinguished them.
My grandmother Belen, based on a biblical legend, told me that the water in which the beans were cooked for the first 20 minutes had to be changed, because the Virgin Mary had stumbled upon them once, I really don't know if she ever stumbled upon a bean or pea plant, but later I learned that it eliminates the bitter taste of some beans.
I also learned that certain ingredients are better crushed than sliced, to enhance their flavor, we can say this about garlic, for example, which has a greater ability to expand its flavor when passing through the crusher, than when chopped with a knife.
My cooking technique
To the lady, Evangelina, from the town of La Sabana, on the Venezuelan coast, I owe the best kept secret of my cooking. She captivated my senses with that heavenly flavor, and I wanted to learn from a master.
Each ingredient must be cooked separately, that is the reason why I add each ingredient one by one. And I always start with the onion, when it is already wilted, I add the next ingredient, and so on until I have finished. This so that each flavor tells its story and tells us about its virtues, because a dish is an opera, where many artists do their part to create a great work, but that's not all.
We all know that salt is responsible for activating the flavors in the dishes, that is why each ingredient is given a pinch of salt once added to the pot, so that each ingredient is distinguished and contributes its content, in addition to completely eliminating the unpleasant (for some) smell of onion.
Thus each flavor has its place and its value within the dishes to be tasted, it is not a chef's technique, it is ancestral knowledge.
