Eggplant rolls. My new recipe.
Today I decided to try making my own recipe appetizer from eggplant.
Ingredients
Eggplant -1
Garlic clove - 1
Mini bell peppers - 4
Muenster cheese - 4 slices
Spinach - 1 cup (can vary)
A little bit of vegetable oil, cilantro, salt, and parmesan.
Start preheating oven to 450F
Cut eggplants into thin slices.
Drizzle a little bit of vegetable oil on eggplant slices.
Lineup a parchment paper on baking pan.
Put baking pan with eggplant in a preheated oven for 15 minutes.
Wash and pat dry bell peppers. Chop them up and sauté with a little bit of garlic and salt in the pan.
Get the eggplants out of the oven, put cheese slices on top of eggplant pieces, and put them back in the oven for 3 more minutes.
After cheese is melted, get the baking pan out. Put bell peppers and spinach on the eggplant slices and roll them up nicely. Put grated Parmesan on top of eggplant rolls and send it back to oven for another five minutes.
Now it’s time to put some cilantro on top of eggplant trolls and that’s it.
You can serve this as an appetizer or a side dish with some grain like quinoa or couscous.
