Today, I want to share another recipe from my mother's recipe notebook. This recipe is very popular in the former USSR countries. The appetizer is very tasty, tested on foreign friends.

Ingredients

eggplant - 2
tomato - 3
garlic - 3 cloves
mayonnaise - 2 Tbsp
salt to taste
oil - 100 ml

Process

Wash and cut the eggplants in circle shaped slices. Salt and leave for 10 minutes.

Heat oil in a frying pan, coat eggplants in flour and fry on both sides.

Wash the tomatoes and cut them into slices.

Make garlic and mayonnaise sauce. For that crush the garlic in a garlic masher, add the mayonnaise, mix.

Put eggplants on a plate, spread the sauce, put tomato slices on top. Garnish with greens.

I like making a sandwich with this appetizer, using rye bread.
