Stir-Fried Watercress With Tofu and Air-Fryer Potatoes

Crunchy in raw condition, chewy in cooked condition. It has a unique slightly meaty and mushroom taste. Watercress is a delicious vegetable to accompany main meals.

For me, Watercress is unique compared to other vegetables. My late mom made me like this vegetable. She said that by eating Watercress we can feel the taste of mushrooms as well as a meaty sensation. That's right! Always amazes me.

The stem has a lot of water content and feels crunchy when we press the Watercress stem with our hands. With our fingers, we can also feel which stems are old and not fit to eat.

Well, in my area, we are used to cooking Watercress for stir-fried dishes. How about in your area? When doing an internet search, I saw that there are some people who eat it in raw condition as a salad.

Watercress is very suitable to be combined with other accompaniments such as tofu. Likewise with other proteins.

This time, I got a really beautiful Watercress! I can not resist the urge to cook them immediately. Then, they must also be cooked immediately because their leaves will turn yellow quickly. If I do have to store them, I usually only store them one day in the fridge. No more.

So, for this time I will make dinner dishes. With Watercress, tofu, and air-fryer potatoes.

Anyway, you can cook potatoes in your way. Maybe frying, roasting with the oven, or just like mine with the air-fryer.




The Ingredients

  • 1 bunch Watercress (about 300 grams)
  • 2 blocks of tofu
  • 1 potato
  • 3 cloves of garlic, sliced
  • 5 small cloves of red onion, sliced
  • Enough red chilli, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • Aromatic leaves according to your taste (I use kaffir lime leaves)
  • 100 ml of water
  • enough olive oil, salt, and pepper for greasing the potatoes



Cooking Steps

Prepare the potatoes. Peel the potatoes and cut the potatoes into lengthwise shapes for French Fries.

Wash them clean, then dry them. Then, sprinkled with salt, pepper powder, also add olive oil. Mix them well. Transfer to the air-fryer container. Or just roast them in the oven.

Don't forget to preheat your air-fryer or your oven. Then roast for about 20 minutes and flip them. Then, roast again for another 20 minutes.

Cut Watercress into small pieces. Just use your fingers. So we can find out which stems are old and must be discarded, not included in cooking because their texture will become tough when cooked. Don't forget to wash them clean.

Cut tofu into cubes if you have thick, square tofu. If you are using long, circular tofu, then just follow that shape. It's just that, cut the tofu into small pieces.

Heat cooking oil. Then, stir-fry slices of garlic, red onion, and aromatic leaves. Stir them well and wait until they create a nice fragrance.

Add slices of red chillies. Stir well for a few moments.

Add Watercress. Stir-fry them for a while. Then, add 100 ml of water. Leave them for 5 minutes with the cooking pot covered.

After five minutes, add the tofu cubes into the stir-fried Watercress. Add salt, and pepper. Cook again for about 3-5 minutes.

Correction of taste before removing them. Usually I add a little sprinkle of sugar if they taste salty, also to balance the taste to be Umami.

As usual, I like to arrange my dishes into something unsual. I just arrange them randomly on a serving plate.

That was for my dinner! Stir-Fried Watercress With Tofu and Air-Fryer Potatoes! In my opinion, they blend perfectly with the advantages of their respective textures. Air-fryer potatoes also taste great with the simple seasoning but it just soaks into the potatoes and makes them totally delicious. That's work!

Water cress? I am not familiar with it but the stem looks like a water spinach here but their leaves is different.

I also love stir frying water spinach. A salt and a soy sauce will make it perfect.
