Mid-Autumn festival is celebrated on the 15th day of the 8th month in the lunar calendar every year, this is a holiday for children. Like Christmas holidays in European or American countries, the Mid-Autumn Festival has a very important meaning in the life of Vietnamese people. This holiday is for children and is a day for everyone in the family to gather and eat together, and burn incense with moon cakes and fruit on the altar.😍😍😍

Part 1: Moon Cakes
The shape of the cake depends on the types of molds, here I have molds with different shapes.
How to make moon cake crust😋
Strain the flour through a sieve, add peanut butter, brown sugar water, cooking oil, honey, egg yolk.
Mix all the ingredients together. It is best to knead the dough with your hands so that it comes together. Cover with a food wrap and let it rest for 50 -70 minutes. You need to remember not to over-knead the dough – it should be a bit wet. If the dough is dry and not smooth, you can add more cooking oil or sugar water to soften it.

How to make mixed cake
Boil the fat in boiling water for a few minutes until the fat is cooked, cut the fat into dices. For raw ingredients like ham or sausage, steam them until they're cooked through. Chop them to the size of the fat (all sizes of the filling should be equal). In a blender, grind ingredients :
Pumpkin seeds
Lotus seeds
Lemon leaves
Roasted sesame
Sausage
Pumpkin jam
Melon seeds
Orange peel jam
Cashew
Sunflower seed
Sugar marinated fat
Jambon

For nuts, you should roast them on a hot pan for about 3-4 minutes, so that when eating we will feel the aroma.
You should only blend for about 10 seconds, which is enough to make the ingredients smaller, but don't puree them. Add sugar and a little oyster sauce, season to taste. Add the flexible dough to stick the above ingredients together, shape into a ball.( If you don't have flour, add oil)

How to make green bean or matcha, chocolate filling

Wash the green beans 2-3 times to make them clean and then soak them in cold water for 4-6 hours to expand them. Once soaked, wash and drain mung beans. Boil green beans with a little salt, boil for 5 minutes or until green beans are tender. Turn off the heat, cover the pot and incubate the green beans in boiling water for 5 minutes until the green beans expand. Put green beans, 100ml water in blender and puree. Grind the green beans thoroughly to make the mung beans puree, then you put the beans through a sieve to make the beans really smooth. Stir the green beans and sugar over low heat for about 20 minutes or 30 minutes until you see the beans become a thick paste. During stir-frying, add a little oil and flour. For chocolate or matcha filling mooncakes, add matcha powder or chocolate powder to the stir-frying step of green beans.

Turn on the oven 180 - 190 degrees Celsius before 10-15 minutes when baking. Bake in the preheated oven for about to 12 minutes. Then take out the cake, spray a thin layer of water on the cake. Leave the cake outside for about 10 minutes or until the cake cools, spread the mixture (egg yolk, fresh milk, cooking oil) on top of the cake. Continue baking for 5-7 minutes. After 24 hours, the cake will have a beautiful golden color and the pattern on the surface of the cake is also clearer.
