Yesterday I went to the market to buy food for some dogs from the community and I found that the prices of the potatoes had gone down a little, I took advantage and bought a little, so today I got excited and prepared some potato pancakes with zucchini for lunch .
Ayer fui para el mercado a comprar alimento para unos perritos de la comunidad y, me encontré que las papas habían bajado un poco de precio, aproveché y compre un poco, así que hoy me entusiasmé y preparé unas tortitas de papa con calabacín para el almuerzo.

Ingredients:
400 g of potatoes
½ zucchini
3 sweet peppers
½ red onion
1 teaspoon of sweet paprika powder
1 teaspoon garlic powder
4 tablespoons of oatmeal
½ cup of natural black sesame seeds
Nutmeg to taste
Olive oil
Salt and pepper to taste
Ingredientes:

1 cucharadita de pimentón dulce en polvo
1 cucharadita de ajo en polvo
4 cucharadas de harina de avena
½ taza de ajonjolí negro y natural

Elaboration process / Proceso de elaboración:
🍂 Peel and cut the potatoes into cubes and then parboil them with a little salt.
🍂 Pelamos y cortamos las papas en cubos y luego la sancochamos con un poco de sal.
🍂 Then we puree them and add freshly ground black pepper and a little nutmeg.
🍂 Luego las hacemos puré y le añadimos pimenta negra recién molida y un poquito de nuez moscada.
🍂I cut the onion and the peppers into small cubes, fried them and added a little salt, the garlic powder and the sweet paprika powder.
🍂 La cebolla y los ajíes los corté en pequeños cubos, los sofreí y les añadí un poco de sal, el ajo en polvo y el pimentón dulce en polvo.
🍂 Now it is time to add the grated zucchini to the puree, I used ½ zucchini because it was quite large, we also added the onion, the peppers and the tablespoons of oatmeal and kneaded to incorporate all the ingredients, then let it rest in the refrigerator for 30 minutes so that it takes better consistency and to be able to form the little cakes.
🍂 Ahora es momento de añadirle al puré, el calabacín rallado, yo utilicé ½ calabacín porque era bastante grande, también le incorporamos la cebolla, los ajíes y las cucharadas de harina de avena y, amasamos para incorporar todos los ingredientes, luego la dejamos reposar en la nevera por 30 minutos para que tome mejor consistencia y poder formar las tortitas.
🍂 After 30 minutes, we moisten our hands with a little water to better manipulate the dough and form our little cakes, preferably medium or small, then pass them through the sesame seeds to give it a special touch.
🍂 Transcurridos los 30 minutos, nos humedecemos las manos con un poco de agua para poder manipular mejor la masa y, formamos nuestras tortitas, preferiblemente de tamaño mediano o pequeño, luego las pasamos por el ajonjolí para darle un toque especial.
🍂 In a non-stick pan with a little olive oil, brown the little cakes on both sides, you have to be very careful when turning them so they don't break, because they are practically a puree presented in a different way.
🍂 En una sartén antiadherente con un poquito de aceite de oliva, doramos las tortitas por ambos lados, hay que tener mucho cuidado al momento de voltearla para que no se rompan, ya que prácticamente son un puré presentado de forma diferente.
🍂 To decorate the plate I made some leaves and a flower with the zucchini peel.
🍂 Para decorar el plato elaboré unas hojas y una flor con la cascara del calabacín.
