Series Food #333: Rice paper rolls vegetables shrimp meat
I have written about this dish too many times because it is my favorite dish. This dish has many versions and different ways of cooking, I have written many recipes including: vegetable roll, shrimp roll, chicken roll, beef roll, pork ear roll, sausage roll, sesame barbecue roll,..However in this article this is the full version of the dish and I have compiled all my favorite ingredients in this recipe. This dish is the culinary soul of Vietnam, this dish appears everywhere from luxury restaurants to small shops and sidewalks.
I never get bored with this dish because every time I eat it, I realize this dish is better than that. This dish is a great combination of vegetables, tubers, meat, pork ear, and shrimp. In short, add any of your favorite ingredients as long as you have rice paper to roll them up. You can easily find rice paper at Asian grocery stores or supermarkets. This dish is suitable to eat in any weather or any time of day, it can appear as a main dish or a dessert. This dish is usually served with fish sauce or peanut sauce, sesame sauce. However, the traditional version of this dish is still enjoying the rolls with fish sauce.
Here are my filling ingredients
- Pig ears
- Cucumber
- Carrot
- Egg
- Lean pork paste
- Lettuce
- Shrimp
- Basil or herbs
- Rice paper
- Fried spring rolls

Clean shrimp and pig ears. Boil shrimp for 10 minutes, peel the shrimp or not, it's up to you. Slice eggs, pork ears, carrots, cucumbers, .. into long thin strands (the thinner the better)
Dipping sauce ingredients
- Lemon
- Garlic
- Chilli
- Fish sauce
- Sugar
- Hot water
Chop the chili and garlic. Mix 1/2 lemon with 1 teaspoon sugar, 1 teaspoon fish sauce and 2 tablespoons hot water, stir until the sugar dissolves. Then add the garlic and chili at the end so they float to the surface. Wash the vegetables and dry. Roll all the prepared ingredients into rice paper, roll tightly, enjoy with the dipping sauce.
